cranberry-apple crumble for one!

as a teenager, i guess you could say that i want to eat something wonderful at anytime without any big hussle. sounds about reasonable, right? well, not for me. with homework, piano, voice, etc, life gets crazy, so i can say that i am officially in love with single serving dishes and treats. i have been lovestruck. <3 br=""> There are some disadvantages though. whenever i make something, everyone else has to make it too. ah, don't you just love your family at these times? for example, i found a recipe for a brownie in a mug and thought i'd give it a whirl. sadly, it wasn't all that great, but right as i was putting the ingredients away, Reagan walked up and insisted that he should have one too. that means, i had to make one for him. haha, you gotta love him. :)

we proceeded to make his, when brandon walked over and said that he wanted one too. he can make things, well, not really, but he thinks he can make stuff, which makes it all that much more fun. i think it's almost harder to make things when you have to take them step-by-step, rather than you making it for them. well, atleast he has more experience and can now make that by himself.....hopefully.

i bring to you today that wonderful recipe of a cranberry-apple crumble (for one!!). this actually was pretty dang good, if you ask me. it was very sweet, and i would definitely recommend a dollop of vanilla ice cream on top, but it's still good by itself. hopefully you can try it! happy cooking!

ingredients:
1 tart apple (peeled and diced)
1 T cranberries
1 T+1 T all-purpose flour
2 pinches salt
1 T butter
1 T brown sugar
2 T quick-cooking oats
dash cinnamon

directions:
1) butter a 1-cup ramekin and add apples and cranberries. sprinkle with 1 T flour, sugar, and 1 pinch salt. toss gently to combine.

2) in a small bowl, melt the butter in the microwave on high for 20-30 seconds. add the remaining topping ingredients plus 1 pinch salt. toss to combine.

3) spoon over the apples and microwave for 1 1/2 minutes, or until apples are tender. (on high, a minute was perfect for my microwave)

4) enjoy!!
